Why kernels expand so much

A popcorn kernel is a tiny pressure vessel. Its hard outer hull traps a little water inside a soft, starchy interior. Heat the kernel and that moisture turns to steam far faster than it can escape — pressure builds until the hull splits, and the starch inside explodes outward and cools into the familiar fluffy flake.
