The Best Oil for Popping Popcorn (and How Much to Use)
Reach into the pantry for “any oil” to pop a batch of popcorn and you might end up with a smoky kitchen, a bitter-tasting batch, or a pot of kernels that never quite pops. Not every cooking oil is suited to the heat popcorn needs, and getting the amount right matters almost as much as picking the right one.
Why smoke point comes first
Stovetop popcorn needs the oil hot enough, for long enough, to keep steadily popping kernels for two or three minutes straight — hotter than a gentle sauté, though not as extreme as deep frying. An oil pushed past its smoke point starts to break down, turning acrid and bitter, which ruins the flavor of everything it touches. That makes a reasonably high smoke point the single most important property in a popping oil, ahead of flavor or price.
Refined coconut oil, canola oil, and plain vegetable oil are the classic choices precisely because their smoke points comfortably clear the heat popcorn needs. Refined coconut oil in particular is the traditional movie-theater choice, valued for a smoke point well above stovetop popping temperatures and a mild flavor that doesn’t compete with butter or salt.
Oils to think twice about
Extra-virgin olive oil has a lower smoke point than refined oils and a distinct flavor that can turn bitter under popcorn heat — better saved for drizzling on a finished dish than for popping a batch from scratch. Butter alone is even more of a problem: its milk solids scorch well before oil would, so pure butter as a popping medium routinely burns before a full batch pops, which is why classic recipes pop in oil first and add melted butter only afterward as a topping.
The classic oil-to-kernel ratio
Most stovetop recipes converge on roughly the same ratio: about 3 tablespoons of oil per 1/2 cup of unpopped kernels — 6 tablespoons of oil per full cup of kernels. That’s enough to coat the bottom of the pot and keep every kernel in constant contact with heat as the pot is shaken, without leaving the finished popcorn visibly greasy.
Too little oil and kernels near the edges of the pot can scorch before the batch finishes popping, since there’s not enough liquid to spread the heat evenly. Too much, and the popcorn turns heavy and oily rather than light and crisp — a case where more definitely isn’t better.
A simple stovetop method
Heat the oil in a heavy-bottomed pot with a lid over medium-high heat, then add three or four test kernels. Once those test kernels pop, the oil has reached popping temperature — add the rest of the kernels in an even layer, cover, and shake the pot gently every few seconds to keep everything moving and prevent scorching. Once the pops slow to a few seconds apart, pull the pot off the heat immediately; the residual heat will finish off the last few kernels without burning the rest of the batch.
Butter is a separate decision
Because butter isn’t suited to the popping step itself, it’s worth treating as a topping added afterward rather than a popping medium. Melt it separately and drizzle it over the finished popcorn in a few stages, tossing between pours so it coats evenly instead of pooling at the bottom of the bowl.
